The only ingredients you need to make this simple spinach pasta are: thin spaghetti, loads of garlic, chilli flakes, baby spinach, extra virgin olive oil, salt, and pepper.
That's it. For a healthy pasta, that is. But we are making a relatively healthy pasta here. So add butter to that list, bebeh!
Ingredients (for two people):
- Enough thin spaghettis for two people
- 10-15 garlic cloves; Shah and i love garlic, so i usually use 15. We don't mind garlic breath.
- 2 tbsp chilli flakes
- A few handfuls of fresh baby spinach leaves; this is totally up to you. Shah and i love spinach so we put loadsss in.
- 3 tbsp extra virgin olive oil (EVOO)
- 1 tbsp butter
- Salt and pepper to taste
Steps:
1. Cook spaghetti in boiling water, until al dente. Strain and put aside.
2. Slice garlic cloves thinly.
3. Heat EVOO and butter in a pot. Throw in the garlic slices and let simmer. Letting the garlic fry slowly in the simmering oil and butter is probably the best way to draw out the flavour of garlic.
4. Put in chilli flakes. Stir to mix with garlic slices and let simmer for a few more minutes.
5. Add strained pasta along with baby spinach leaves. Stir to mix them all around.
6. Flavour with salt and pepper, to taste.
Eat!
This recipe can be tweaked freely, as you wish. Add more EVOO or butter or chilli flakes if you want.
I love how easy it is to make this. Perfect for the days when i know i must cook but at the same time, i'm really really really lazy. This pasta is a variation of aglio olio, yes, but isn't it genius how you can add even more vitamins (or something else healthy i suppose) to aglio olio by adding fresh greens?
Tip on how to prevent pasta from sticking: my friend Che Pah taught me to dump cooked pasta inside iced water, straight from the pot. The cold works on them! I just run cold tap water on the strained pasta since it's easier for me. Tap water here is drinkable here in Paris, but since it isn't in Malaysia, i might not do that anymore when i go home though.
