Easy (and Lazy!) French Toast

Girl wants French toast, girl makes some. These are SO easy to do and takes too little time to do.
(And if you live in Malaysia, guess what, I didn't even use any fancy bread. Gardenia wholemeal slices are my homegirls.)

What you need:
  • Two slices bread; I use wholemeal bread as that's what I had in my kitchen, plus wholemeal will hold together better even when soaked
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla essence
  • 2-3 cinnamon sticks
  • Oil and/or butter
How to make 'em:

1. Break eggs in a bowl (I used a deep plate), then add milk and vanilla essence. Beat well using a fork, then add cinnamon sticks, and then beat the mixture a little bit more (it's harder to beat with the cinnamon sticks around, so feel free to use cinnamon powder if you like a stronger cinnamon taste).

2. Soak bread in mixture for about a minute on one side of bread, then flip and soak for a further minute; I divided my egg mixture into two plates to soak my breads quicker.

3. While the bread is soaking, heat up about half a teaspoon of oil (I use extra virgin olive oil) and half a teaspoon of butter in a flat pan on medium heat; feel free to use either oil or butter only, or mix them as I did. When the butter has melted, transfer soaked bread into pan and let it brown.

I like my French toasts to be soft on the inside and slightly crispy on the outside so I had to play with the heat and the timing of browning a bit.

4. Cut the bread into halves diagonally, arrange on a plate, drizzle loads and LOADS of maple syrup onto them, and add your favourite sweet and sour fruit pieces on the side.
I'm obsessed with super sweet grapes so I balanced the sweetness with some strawberries.
